He Shot a Moose and Starved Anyway

A pile of meat is not dinner. It is a clock. Leave it wet and warm and the microbes win before you do. That is the whole sermon, and most of modern America has never heard it.

Idaho hunter and bowyer Clay Hayes put the lesson on YouTube in June 2025. The clip has since passed a million views. Ten minutes. No studio lighting. No TED-talk humility. Just a man in the woods with a knife, a rack of sticks, and a truth our great-grandfathers treated as ordinary as tying a boot.

Hayes won Season 8 of History Channel’s Alone. Seventy-four days on Chilko Lake in British Columbia. Grizzlies. A mountain lion at close range. He was the only contestant to kill a deer. He ate the heart first, then smoked the rest so it would still be food when the cold set in. That is not television swagger. That is the difference between walking out and tapping out.

The Boy in the Bus

Hayes opens with Chris McCandless. You know the story even if you pretend you don’t. Emory graduate. Gave away his law-school money. Rebranded himself Alexander Supertramp. Walked into the Alaska bush in 1992 with a .22 and a head full of Thoreau. In June he killed a moose. Hundreds of pounds of fat and meat. Within days the carcass was maggots and regret. He wrote that shooting it was one of the greatest tragedies of his life. Then he starved. Hunters found what was left of him in an abandoned bus.

The culture turned that failure into a pilgrimage. Sean Penn made a pretty movie. Tourists kept getting hurt trying to reach the wreck. Alaska finally airlifted the bus out so fewer romantics would drown in the Teklanika. Nobody wanted to say the plain thing. Competence is not a vibe. The wilderness does not grade on sincerity.

Meat spoilage is caused primarily by microbial activity or bacterial growth. And so the key to preserving meat without refrigeration is to simply get that meat dry enough so that those microbes can’t grow.

That is Hayes, not a USDA pamphlet. Dry the meat and the bugs lose their kitchen. Fail to dry it and you have performed a funeral for an animal and learned nothing.

Sun When You Can Smoke When You Must

When the air is warm, dry, and moving, the method is almost insulting. Slice lean meat a quarter inch or thinner. Butterfly the small pieces so they open into sheets. Hang them on a rack of sticks. Flip them when a rind forms. Hayes timed a batch at about 70 degrees and 20 percent humidity. By late afternoon it was stiff enough to throw in a sack. Salt helps the flavor. It is not required for the science.

Fat is the traitor. Fat will not dry. Leave it on and the strip turns rancid while the lean is still honest. Trim it. Render it later, which Hayes covers in a follow-up. Done right, rendered fat keeps nearly forever. Done wrong, you have greased your own spoilage.

Cool and damp is a different country. That was British Columbia on Alone. Hayes built a low smoker from sticks, let a small fire die down, then fed it green or punky wood for smoke. No Douglas fir. Conifers make the meat taste like a turpentine accident. Smoke dries the strips slowly and throws up an acidic coat bacteria hate. Thin slices still take days. Rush it and you get a hard shell over a wet center, which is just a delayed version of McCandless’s moose.

Flies will come. Yellow jackets too. Hayes says they nibble the surface and do not ruin the work if the meat is sliced clean, without pockets. A smoky fire helps. In a bad wildfire season you may not get to light one. Then you watch, you flip, and you bag it before dark.

You do not have to live on shoe leather. On the show he cut the jerky small and simmered it with mushrooms and cranberries. The meat comes back. That is the old pattern. Dry it when God gives you a surplus. Soften it when the pot is on.

When they were filled, he said unto his disciples, Gather up the fragments that remain, that nothing be lost.

The Grocery Store Is Not Providence

Americans talk preparedness like it is a hobby aisle. Buckets of freeze-dried chili. A generator they never tested. Then the power dies for four days and the steak in the crisper becomes a science project. The average supper already traveled more than a thousand miles to reach the shelf. There is about three days of food in the local pipeline. That is not a conspiracy. That is logistics, and logistics fail.

Hayes is not selling panic. He is selling a skill every farm wife used to own. The point is not that you will be dropped on a glacial lake with ten items and a camera. The point is that a civilization which cannot keep meat without a humming box has outsourced its stomach to strangers. Strangers have unions, weather, and politics. None of those love you.

McCandless wanted the wilderness to baptize him. It billed him instead. Hayes went into the same kind of country with a knife and a plan and walked out heavier in the only way that matters. He knew how to turn a kill into days. That is not macho cosplay. That is dominion with dirty hands.
